I was so excited about making tapioca pudding. It's one of my all-time favorite desserts. I've loved it since I was a child. And apparently, as a child, I was much better at making it. My attempt today produced mediocre results. Although, I will place most of the blame on the tapioca pearls. When I made it when I was younger I would ask my mom to buy the pearls you soak overnight, the ones I used today are the quick-tapioca. I think. It's all in Chinese. I think they're somewhere in between soak overnight and minute tapioca. I tested them after I first bought them and within twenty minutes there were soft, so I assumed they were "quick." But, in the pudding, they're still very firm.
Maybe they'll soften as they refrigerate.
